Regent Phu Quoc, Vietnam will welcome celebrated Executive Chef Calvin Choi from Regent Hong Kong who will bring his artistry to the resort’s signature dining venues from 7 to 15 October 2024.

Known for his mastery of both Hong Kong and Chinese cuisine, Choi will create a selection of dishes that exemplify the delicate balance between tradition and innovation, from Clay Pot Rice with Black Bean Ribs and Chinese Sausage to Phu Quoc Seafood with Oyster Sauce and Caviar, as well as Hainanese Chicken prepared two ways with fragrant Ginger Rice.

These menus will be featured at the resort’s two standout dining venues, Ocean Club and Rice Market, each offering their own distinct experiences while showcasing Choi’s renowned culinary expertise. Ocean Club, with its beachfront setting and Mediterranean-inspired flavours, will offer a casual yet sophisticated dining atmosphere where locally sourced seafood such as Phu Quoc abalone and prawns take centre stage.
